What you will do:
The Caf Prep Cook prepares all food items necessary for line cooks
with set standards efficient operation of the kitchen. Keeps
kitchen area neat and sanitary. Ensures quality and food safety
standards are met. The Caf Prep Cook contributes to the successful
day-to-day operations with world-class guest experience and
providing a safe and respectful environment for guests and
employees alike. The Caf Prep Cook maintains Tillamook s Shared
Values, creating a world-class guest experience to the one million
guests that visit annually, and supports in the Creamery s daily
operations.
Here s a day in the life:
Adhere to all recipes. Recipe book used 100% when prepping food.
Good knife skills and time management are essential.
Prep food for day ahead. Transfer all prep food into clean
containers. Proper dating and labeling are essential. Take back
dirty containers to dish pit. Record all waste.
Thermometer is used for every hot item or cooling process. Cooling
chart used. Heating chart used.
Inspect all product prior to prepping. If product is of poor
quality, notify a manager or shift lead. All produce gets
washed.
Complete opening and closing procedures. Take temperatures. Notify
lead/manager if temps are not in range.
Rotate and organize walk in, freezer and dry storage. Assist with
putting orders away and correctly rotate product in dry storage,
freezer and walk-in. FIFO
rotating old product to front and new product in back.
Maintain a clean and sanitary work area. Sanitary solution changed
hourly. Floor swept hourly. Prep counters cleaned with soap and
water and then sanitized.
Restock cook refrigerator with properly rotated prep product.
Clean Prep area and walk-in. Wipe out all counters and sinks. Help
keep walk-in refrigerator, freezer and dry storage neat, clean and
organized. Sweep floor during shift.
Establish and maintain effective relationships with employees,
supervisors, and the general public.
Assist with all catered events.
Assist line cooks when stocking is needed.
Knowledge, Skills, and Abilities:
High school diploma or GED is preferred.
Minimum 1 year of experience with commercial food preparation and
equipment preferred.
Knowledge of health regulations.
Physical Requirements:
Standing and/or walking
Lifting 25 lbs.
Vision for machine or computer operations
